I used:
3 egg whites
1 whole egg
2 slices of tomato, chopped
1/2 a mushroom, chopped
10 leaves of baby spinach
1 oz cheddar cheese
Sprinkle of chopped cilantro
Now, obviously my omelette making skills still need work, but I was quite proud that it didn't come out a complete scramble. LOL
The entire omelette came out to 240 calories...the 8 oz of OJ was another 110 calories. All in all, that was a delicious 350 calorie breakfast!!
